Dissolve the yeast in the warm water and let it stand a few minutes until foamy.
Combine the flour, sugar and salt; add the yeast water and the oil, and mix and knead to a smooth, soft dough.
Let it rise until doubled, about 1–2 hours, or refrigerate for a longer, better-flavored ferment.
Divide in two and shape into 9-inch rounds.
Top and bake on a stone at about 500°F until golden.
