Heat 2 tbsp of the butter or ghee in large frying pan over medium-high heat. Add the sliced chicken and stir-fry until browned (not fully cooked), about 5 minutes. Remove from the pan.
Melt remaining butter or ghee and stir-fry the onion until browned, about 5-8 minutes. Add garlic and ginger paste and continue frying about 2 minutes. Add peppers and cook 2 minutes.
Stir in seasonings, diced tomatoes (undrained) and water and bring to a boil. Return chicken, turn heat to low, and simmer ~10 minutes until chicken is fully cooked, stirring frequently.
