Cook meat with onion and garlic until onion is translucent and meat is browned. Drain if desired.
Add all tomatoes (crushed, sauce, paste), Italian seasoning, salt, and pepper. Bring to a boil, reduce and simmer 15 minutes. Preheat oven to 375F. In small bowl mix ricotta, egg, and 1 cup of Italian cheese blend.
Grease a 13x9 baking dish. Cover the bottom of dish with 1 cup of meat sauce. Build lasagna as follows:

Repeat layer a — total used after layer b: about half of total sauce (3 1/2 cups sauce), 6 noodles, about half of total ricotta mix (1 1/3 cup ricotta mix), 1 1/3 cups mozzarella (2/3 of the bag).
Repeat layer a again — total used after layer c: about 3/4 of total sauce (4 3/4 cups sauce), 9 noodles, about 3/4 of total ricotta mix (2 cups ricotta mix), 2 cups mozzarella (all of the bag).
Final layer: lay 3 lasagna noodles side by side, top with remaining meat sauce (around 1 1/4 cups), spread remaining ricotta mix over sauce (about 1/2 to 2/3 cups), and top with remaining Italian cheese blend (~1 cup).
Cover with foil and bake for 35 minutes. Remove foil and bake an additional 10-15 minutes until cheese top is browned. Remove from oven and cool on rack at least 10 minutes before cutting and serving.
